Vegan Chocolate Chip Cookies

It’s time to break out your chef hat! We’re back in the kitchen today baking our favorite vegan chocolate chip cookies. We love finding ways to make our favorite sweet treats a bit healthier, and this recipe does the trick. The best part is that they still taste just as great. Ingredients: 

  • ¼ cup vegan butter softened 
  • 1/3 cup + 1 tbsp light brown soft sugar 
  • 2 tbsp caster sugar 
  • ½ tsp vanilla bean extract 
  • 1 tbsp non-dairy milk 
  • 1 cup all-purpose flour 
  • ½ tsp baking powder 
  • ½ tbsp cornstarch  
  • 3 oz dairy free dark chocolate chips 

Instructions:  

  • Preheat the oven to 350* and line a baking sheet with parchment paper. 
  • Place the vegan butter, brown sugar, and caster sugar in a bowl and whisk until fluffy. 
  • Whisk in the vanilla bean extract and milk. 
  • Sift the flour, baking powder, and cornstarch together, then mix into the bowl. Add the chocolate chips and stir through. The dough may be stiff. 
  • Divide the dough into eight portions and roll each into a ball.  
  • Place them spaced apart on the baking tray and flatten slightly.  
  • Bake for 10-12 minutes until pale golden. 
  • Let them cool for 10 minutes. 
  • Enjoy!
